About Elsy

Elsy Dinvil is the founder of Creole Me Up, a Portland-based company specializing in organic, allergen-free Haitian food products. Born in Jérémie, Haiti, Elsy came to the United States in 1991 on a full scholarship to study Food Science Technology. After completing her studies and fulfilling a two-year commitment in Haiti, she returned to the U.S. in 1999.

In 2017, after battling severe digestive issues and undergoing colon surgery, Elsy founded Creole Me Up to share the healing power of authentic Haitian cuisine. Starting with limited resources, she hand-labeled jars of her homemade marinades and sauces, selling them at local farmers markets. Her dedication and resilience have since transformed Creole Me Up into a celebrated brand, offering a range of products including marinades, spreads, salad dressings, and pickled vegetables. Elsy is also an author, sharing her culinary expertise through cookbooks that make Haitian flavors accessible to home cooks. ​
